Avocado Hummus

Ingredients

1 to 2 garlic cloves, minced

1 can chickpeas, drained

2 ripe avocados, roughly chopped

2 tablespoons Greek yogurt

3 tablespoons tahini

Salt, to taste

1 teaspoon ground cumin

1 teaspoon coriander

½ teaspoon cayenne pepper

Juice of ½ lime

Reserved liquid from canned chickpeas, as needed for consistency

Instructions

In a food processor, combine the garlic, chickpeas, avocados, Greek yogurt, tahini, salt, cumin, coriander, cayenne, and lime juice. Blend until smooth and creamy.

If the mixture is too thick, add a small amount of the reserved chickpea liquid and blend again until the desired consistency is reached. Taste and adjust seasoning as needed.

Transfer the avocado hummus to a serving dish and press plastic wrap directly onto the surface to prevent oxidation. Chill briefly before serving.

Before serving, smooth the surface, drizzle with extra virgin olive oil, and garnish with fresh parsley or your preferred herbs.
