Root Vegetable Coleslaw

Serves : 4 people

Ingredients :

Dressing :

1/4 cup olive oil

2 tbsp apple cider vinegar

1 tbsp maple syrup

1 tsp finely chopped garlic

Pinch of salt & pepper

Coleslaw :

2 raw beetroot, skinned and grated

2 raw carrots, skinned and grated

1 large apple, skinned, de-cored and grated

1/2 cup pomegranate seeds

Optional toppings;

Radishes

Dill

Method:

Mix all dressing ingredients together in a small bowl.

In a larger bowl, combine all the coleslaw ingredients and then stir in the dressing.

Transfer to a serving dish and garnish with dill and finely sliced radish.
