chickpeas cookies
Chickpea Chocolate Chip Cookies
Makes: around 20- 25 cookies
Ingredients:
1 1/2 canned chickpeas, rinsed and drained
1/2 cup peanut butter
1/2 cup organic honey
1 tsp baking powder
Pinch of salt
1/3 cup chocolate chips (vegan chocolate chips are available)
Method:
Pre-heat oven to 180°C.
Blend all the ingredients, except for the chocolate chips, in a blender until
smooth consistency.
Fold the chocolate chips into the dough until evenly distributed.
Dampen your hands and roll the dough into walnut size balls. Place the
balls on a sheet of baking paper in a baking tray and, using a damp spoon,
press down on each ball to flatten the cookie.
Bake in the oven for 15 minutes.

Store in an air-tight container in a dry, cool place.
