Coconut & blueberry Chia Pudding

 

Ingredients

¼ cup chia seeds

1 cup unsweetened coconut milk (or almond milk)

1 tablespoon honey

½ teaspoon vanilla extract

¼ teaspoon cinnamon

¼ cup toasted coconut flakes

½ cup fresh blueberries

1 tbsp cacao nibs

Instructions:

Prepare the chia pudding: In a jar or bowl, mix the chia seeds, coconut milk, or honey, vanilla extract, cacao nibs and cinnamon. Stir well to combine. Let it set: Cover and refrigerate for at least 2 hours or overnight, stirring once after 30 minutes to prevent clumping. Assemble: Once thickened, give it a good stir, then top with toasted coconut flakes and fresh blueberries.
