Quinoa and Oat Banana Pancakes

 
 

Serving size/ Yield: approximately 10-12 pancakes

Ingredients: 

2 small Bananas

1 cup Oat flour

1 cup Almond Milk

1/2 Teaspoon Cinnamon

1 tsp Baking Powder

1/2 cup Quinoa

1 egg or 1 tbsp Flax Seeds mixed with 3 tbsp Water

Pinch of Salt

3 tbsp Water

3 tbsp Water

Method

Combine quinoa and water in a medium pot. Bring to a boil, reduce heat and let simmer for 15 minutes. Once quinoa is cooked set aside to chill. Meanwhile you can start on the mixture. Combine all the wet ingredients together, bananas, almond milk and egg together in a medium sized bowl, mix well. Add baking powder and oat flour, salt and cinnamon, stir until well combined. Once quinoa chilled add to mixture and stir until well combined.

Place nonstick pan over medium-high heat. Place about 1/4 cup of your pancake mixture onto the pan and cook until you see bubbles appear. Flip, and cook for a couple minutes. Remove from pan and repeat.

Note: 

I used an egg in this recipe however if do not have eggs in your diet please replace with flax egg.
