Mezze Platter
Baba Ganoush
Ingredients
2 aubergine
¼ cup tahini
Juice of 1 lemon
1 finely chopped garlic clove
1 tsp Sumac
1 tbsp olive oil
1 tbsp Greek yoghurt
Salt and pepper to taste
Method
Cut aubergine in half lengthways and sprinkle with salt. Leave on kitchen roll for about 30 mins to allow the moisture out. Tap dry with kitchen roll.
Put baking paper in a baking tray and lightly grease with olive oil. Place the aubergine halves, flesh-side down on the baking paper and bake in a pre-heated oven at 220°C for 30 minutes. Remove from oven and allow to cool.
Meanwhile mix together the tahini, lemon juice, garlic, sumac, olive oil and Greek yoghurt till smooth.
When the aubergine halves are cool enough to touch, scrape the flesh out of the skin and mash the flesh with a fork to produce a rough paste, retaining some texture. Add to the tahini mixture and fold in. Add salt and pepper to taste.
Tzatziki
Ingredients:
½ cucumber, grated
1 cup Greek yoghurt
Juice of 1 lemon
1 garlic clove, finely chopped
1 tbsp chopped dill
1 tbsp chopped mint
Salt to taste
Method
Place the grated cucumber on a clean towel and cover with kitchen roll. Leave for 20 minutes, then press as much liquid as possible out of the cucumber soaking it up with kitchen roll.
Spoon the cucumber into a bowl and mix in all the remaining ingredients. Season with salt.
Muhammara
Ingredients:
300g jar roasted red peppers, drained
1/3 cup breadcrumbs
½ cup walnuts, roasted
1 tbsp pomegranate molasses
1 tsp sumac
½ tsp ground cumin
Squeeze of lemon juice
Salt to taste
Method:
Put the roasted walnuts in a blender to create a rough powder. Add all the other ingredients and blend into a dip consistency.
Hummus
Ingredients:
1 jar cooked chickpeas
¼ cup tahini
1 clove garlic, finely chopped
¼ cup olive oil
Juice of ½ lemon
½ tsp ground cumin
½ tsp ground coriander
3 tbsp water
Salt to taste
Method
Blend all the ingredients together in a blender, adding additional water, if necessary to achieve a smooth consistency for the dip.
Serve with crudités:
Radishes
Carrots, peeled and cut into strips
Cucumber, cut into strips
Red or yellow peppers, deseeded and cut into strips
