GF Tart Tatin

Ingredients

8 organic green apples, peeled

Squeeze of lemon juice

3 tbsp butter

¼ tsp cinnamon

1/3 cup of date paste

1 320g packet of puff pastry

Method

Cut the apples into quarters and remove the core.

Melt the butter with the date paste in a 28cm ovenproof frying pan, cooking for a few minutes whilst stirring.

Arrange the apple quarters closely together in a circular shape in the saucepan, sprinkle with the cinnamon and cook over a medium-low heat for around 10 minutes until the apples are soft.

Remove from heat and leave to cool for about 5 minutes.

Once cool, lay the sheet of puff pastry over the apples, tuck in the edges and then bake in a pre-heated oven for about 25 mins until the pastry is golden brown.

Note:

Date paste can be used in a variety of recipes replacing sugar 1:1.

Date Paste Recipe:

Liquidise 1 cup of dates without stones, together with ¼ cup of water to create the paste.  The paste can be stored in the refrigerator for about 1 week in a sealed jar.
