Banana blueberry bread

 
 
 

GF Banana and Blueberry Cake

Ingredients :

2 cups oat flour

3 tbsp coconut sugar

1 tsp baking powder

2 eggs, whisked together

3 dates, de-stoned and finely chopped

1 tbsp vanilla extract

Handful of blueberries

2 bananas, peeled and cut in half lengthways

 
 

Method:

Pre-heat oven to 180° C.

Line a baking dish with baking paper.

Combine oat flour, coconut sugar and baking powder in a bowl, then

add the eggs, the dates and the vanilla extract.

Spoon the cake batter into the baking dish and sprinkle with

blueberries. Bake in the oven for 25 mins, then lay the split bananas

on the cake and return to the oven to bake for a further 20 mins.

Chef’s note :

The eggs can be replaced with ‘flax egg’.

Ingredients :

2 tbsp flax seeds

6 tbsp water

Method :

Combine flaxseed and water, and leave to sit for about 5 minutes.
